In 2021, almost 168 thousand metric tons of cheese were produced in Japan, accounting for the largest share of dairy products produced domestically. While the processing of milk into dairy products in Japan is covered by small farms throughout the country, the major supplier of raw milk is Hokkaido Prefecture.
