Mexico: people working in the tortillas market 2014-2017
In 2017, the number of people working on the corn tortillas and nixtamal-based dough market in Mexico amounted to 155,549, 288 more than the year before. Tortillas are one of the most important ingredients accompanying Mexican cuisine. The most traditional kind of tortillas are prepared from a dough made by a grain called nixtamal. Nixtamal is the result of corn going through a process called nixtamalization and is used for the elaboration of other products such as tamales.
